  • 1 cup cottage cheese
  • 2 cups assorted veggies e.g., zucchini, bell peppers, spinach
  • 2 eggs
  • 1 cup shredded cheese

Instructions
 

  • Preheat oven to 375°F (190°C).
  • Chop the veggies into bite-sized pieces and sauté or roast them.
  • Mix cottage cheese, eggs, and seasonings in a bowl.
  • Layer the cooked veggies in a greased baking dish and pour the cottage cheese mixture over.
  • Top with shredded cheese and bake for 25-30 minutes, or until golden and bubbly.
