Ingredients
  

Salad Ingredients

  • 4 cups fresh rocket leaves washed and dried
  • 1/2 cup cherry tomatoes halved
  • 1/4 cup Parmesan cheese shaved

Dressing Ingredients

  • 3 tbsp extra virgin olive oil cold-pressed for best quality
  • 1 tbsp balsamic vinegar aged for richer flavor
  • 1/2 tsp sea salt or Himalayan pink salt
  • 1/4 tsp cracked black pepper freshly ground for best flavor

Instructions
 

  • Wash and thoroughly dry the rocket leaves.
  • Slice the cherry tomatoes in half and shave the Parmesan cheese.
  • In a small bowl, whisk together the olive oil, balsamic vinegar, sea salt, and black pepper.
  • In a mixing bowl, gently toss the rocket leaves, cherry tomatoes, and Parmesan cheese.
  • Drizzle the dressing over the salad just before serving.

Notes

For a vegan option, replace Parmesan with nutritional yeast or toasted pine nuts.
