Instructions
Wash and thoroughly dry the rocket leaves.
Slice the cherry tomatoes in half and shave the Parmesan cheese.
In a small bowl, whisk together the olive oil, balsamic vinegar, sea salt, and black pepper.
In a mixing bowl, gently toss the rocket leaves, cherry tomatoes, and Parmesan cheese.
Drizzle the dressing over the salad just before serving.
Notes
