Ingredients
  

  • 2 cups Oaxaca or Chihuahua cheese shredded
  • 1 cup Chorizo sausage crumbled
  • 1/2 cup onion finely chopped
  • 1 medium jalapeño sliced
  • 2 tbsp fresh cilantro chopped
  • 8 small corn tortillas
  • 1 tbsp olive oil
  • 1/2 tsp ground cumin
  • 1/2 tsp smoked paprika

Instructions
 

  • Prepare and chop all ingredients.
  • Heat olive oil in skillet over medium heat; cook chorizo until browned.
  • Add onions and jalapeños; sauté until soft.
  • Reduce heat to medium-low; spread shredded cheese evenly over the mixture.
  • Cover skillet and melt cheese for 5–7 minutes until bubbly.
  • Garnish with cilantro and serve immediately with warm corn tortillas.

Notes

For a vegetarian version, omit the chorizo or use a plant-based alternative. You can also experiment with different cheeses or add toppings like tomatoes and mushrooms.
