Ingredients
  

  • 1 lb ground turkey
  • 2 medium zucchinis sliced
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • salt and pepper to taste

Instructions
 

  • Heat olive oil in a skillet over medium heat.
  • Add ground turkey and cook until browned, about 7 minutes.
  • Add onions and garlic, and cook until fragrant, about 2 minutes.
  • Stir in sliced zucchini and season with paprika, Italian seasoning, salt, and pepper.
  • Cook for an additional 5–7 minutes until zucchini is tender.
  • Serve hot, garnished with fresh herbs.

Notes

Be careful not to overcook the zucchini to avoid it getting too watery. You can adjust the seasoning based on your taste. Great served with a side salad or over cauliflower rice.
