Ingredients
  

  • 4 chicken thighs skin-on
  • 1/4 cup olive oil
  • 2 lemons juiced
  • 3 cloves garlic minced
  • 2 tbsp fresh oregano chopped
  • 2 tbsp fresh parsley chopped
  • 1/2 tsp red pepper flakes
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions
 

  • Mix olive oil, lemon juice, garlic, oregano, parsley, red pepper flakes, salt, and black pepper in a bowl.
  • Marinate chicken thighs in the mixture for 30 minutes to 4 hours.
  • Preheat grill to medium-high heat (~400°F).
  • Grill chicken skin-side down for 6-7 minutes until crispy.
  • Flip and grill another 5-6 minutes until internal temperature reaches 165°F.
  • Rest chicken for 5 minutes. Serve with lemon wedges and fresh herbs.
