mascarpone cheese
eggs
granulated sugar
vanilla extract
cocoa powder

Recipe Instructions
Separate eggs and beat yolks with sugar until pale and creamy
Add mascarpone to yolk mixture and gently combine
Beat egg whites to stiff peaks in a separate bowl
Fold egg whites into mascarpone mixture
Mix coffee with sugar in a shallow dish
Quickly dip gluten free lady fingers in coffee (about 1 second each side)
Arrange soaked lady fingers in single layer in 8x8 dish
Spread half the mascarpone mixture over lady fingers
Add second layer of dipped lady fingers and top with remaining cream
Refrigerate for at least 4 hours or overnight
Dust with cocoa powder just before serving
