  • diced vegetables bell peppers, spinach, onions
  • shredded cheese
  • salt to taste
  • black pepper to taste
  • fresh herbs optional

Instructions
 

  • Preheat oven to 350°F (175°C).
  • Grease muffin tin or line with silicone liners.
  • Whisk eggs thoroughly.
  • Add diced vegetables, cheese, salt, pepper, and herbs; mix gently.
  • Pour mixture evenly into muffin cups, filling 3/4 full.
  • Bake for 18-20 minutes until set and golden on top.
  • Let cool slightly before removing from tin.
  • Serve warm or store refrigerated/freezer for later use.
