Ingredients
  

Chicken & Marinade

  • 4 pieces boneless chicken thighs
  • 1 cup buttermilk for marinade

Breading Station

  • 1 cup all‑purpose flour
  • 1 cup panko breadcrumbs
  • 2 eggs beaten
  • 1 tsp cornstarch optional, for extra crisp

Finishing

  • ½ cup hot honey
  • ¼ cup feta cheese crumbled

Instructions
 

  • In a bowl, combine chicken thighs with buttermilk (plus spices if desired). Marinate at least 30 minutes.
  • Heat oil in fryer or pan to 350°F (175°C).
  • Set up breading station: flour (with optional cornstarch), beaten eggs, and panko.
  • Dredge each thigh in flour → egg → panko, pressing to coat well.
  • Fry chicken until golden and internal temp reaches 165°F, ~6–8 minutes per side.
  • Remove, drain briefly, then immediately drizzle hot honey over each thigh.
  • Top with crumbled feta and serve warm.

Notes

For a lighter version, bake at 425°F for ~25 minutes. Swap feta for blue cheese for a different flavor. Double marinade time for deeper flavor.
