Instructions
Preheat oven to 375°F (190°C) or air fryer to 400°F (200°C).
Drain the cottage cheese using a clean kitchen towel or cheesecloth to remove excess moisture.
In a mixing bowl, combine cottage cheese, egg, Parmesan, salt, pepper, and herbs. Stir until well combined.
Line a baking sheet with parchment paper and spread the mixture as thinly and evenly as possible.
Bake for 15-20 minutes (or air fry for 10-12 minutes), flipping halfway through, until golden brown and crispy.
Remove from oven/air fryer and let cool for 5 minutes. Break into chip-sized pieces and enjoy!
Notes
For extra crispiness, ensure you spread the mixture as thin as possible. Store in an airtight container with a paper towel to maintain crunch.
