Ingredients
  

  • boneless chicken breasts or thighs
  • crushed cornflakes
  • eggs for coating
  • all-purpose flour for coating
  • salt
  • pepper
  • garlic powder
  • paprika
  • olive oil spray or melted butter for baking

Instructions
 

  • Preheat oven to 400°F.
  • Line tray with parchment paper or foil. Use an optional rack if available.
  • Set up breading bowls: one with seasoned flour, one with beaten eggs, one with crushed cornflakes.
  • Flatten chicken pieces for even cooking.
  • Coat chicken in flour, then egg, then cornflakes.
  • Place on tray, spray with oil or brush with butter.
  • Bake for 25 minutes or until internal temperature reaches 165°F.

Notes

Not vegan unless adapted. Less crispy when reheated in the microwave. Great for meal prep and leftovers.
