12soft taco-sized tortillascorn or flour, based on preference
1lbground beef or chickencan substitute with plant-based alternative
1cupshredded cheesecheddar and Monterey Jack mix recommended
1cuplettucefinely chopped iceberg or romaine
1/2cupdiced tomatoesor salsa for extra flavor

Instructions
Preheat the oven to 375°F (190°C).
In a skillet over medium heat, cook the ground beef or chicken until browned. Drain excess fat and add taco seasoning. Stir and cook for an additional 2-3 minutes.
Lightly brush or spray both sides of the tortillas with olive oil. Arrange them in a muffin tin or taco rack to help hold their shape.
Fill each tortilla with the cooked meat mixture, then top with shredded cheese.
Bake for 10-12 minutes, or until the cheese is melted and the tortillas are crispy.
Remove from the oven and top with lettuce, diced tomatoes, and a dollop of sour cream or Greek yogurt.
Notes
For a healthier option, use lean ground turkey or a plant-based meat alternative. You can also add a layer of refried beans or guacamole for extra creaminess.
