Ingredients
  

  • 2 large eggs
  • ΒΌ cup cottage cheese (2% fat recommended)
  • 1 teaspoon butter or oil for cooking
  • Salt and pepper to taste

Instructions
 

  • Crack eggs into a bowl and whisk them lightly with a fork
  • Add cottage cheese to the beaten eggs and gently mix
  • Season with salt and pepper to taste
  • Heat a non-stick pan over medium-low heat and add butter or oil
  • Pour in the egg mixture and let it cook for 30 seconds without stirring
  • Using a spatula, gently fold the eggs from the edges toward the center
  • Continue cooking and folding until eggs are just set but still slightly moist
  • Remove from heat (eggs will continue cooking slightly)
  • Garnish with optional fresh herbs and serve immediately
