Ingredients
2 large eggs
ΒΌ cup cottage cheese (2% fat recommended)
1 teaspoon butter or oil for cooking
Salt and pepper to taste
Instructions
Crack eggs into a bowl and whisk them lightly with a fork
Add cottage cheese to the beaten eggs and gently mix
Season with salt and pepper to taste
Heat a non-stick pan over medium-low heat and add butter or oil
Pour in the egg mixture and let it cook for 30 seconds without stirring
Using a spatula, gently fold the eggs from the edges toward the center
Continue cooking and folding until eggs are just set but still slightly moist
Remove from heat (eggs will continue cooking slightly)
Garnish with optional fresh herbs and serve immediately
