Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
Mash the ripe bananas in a large mixing bowl until smooth with some small chunks remaining.
Whisk together the wet ingredients: add cottage cheese, eggs, honey (or maple syrup), and olive oil (or melted butter). Mix until smooth.
In a separate bowl, whisk the dry ingredients: whole wheat flour, baking soda, cinnamon, and salt.
Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Do not overmix.
Fold in any optional add-ins such as nuts, chocolate chips, or raisins.
Pour the batter into the prepared loaf pan and smooth the top.
Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Cool the banana bread in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
