Ingredients
  

  • 2 cups cottage cheese full-fat for creamier texture
  • 1/2 cup Parmesan cheese freshly grated
  • 2-3 cloves garlic minced
  • 1/4 cup milk or more as needed
  • 2 tbsp butter or olive oil
  • 1 tsp Italian seasoning or dried herbs of choice
  • Salt & pepper to taste
  • 1 tsp lemon juice freshly squeezed
  • pinch nutmeg optional, for depth of flavor

Instructions
 

  • Add cottage cheese, garlic, and milk to a blender. Blend until smooth and creamy.
  • In a saucepan, melt butter over medium-low heat.
  • Pour the blended mixture into the pan and stir continuously for 2-3 minutes.
  • Reduce heat to low and gradually stir in Parmesan cheese, Italian seasoning, salt, and pepper.
  • Add lemon juice and a pinch of nutmeg, stirring until well combined.
  • Serve immediately over pasta, vegetables, or protein of choice.

Notes

For a dairy-free version, substitute cottage cheese with silken tofu, Parmesan with nutritional yeast, and butter with olive oil.
