Ingredients
  

For the Chicken:

  • 1.5 pounds boneless, skinless chicken breasts cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 12-15 wooden skewers soaked in water for 30 minutes

For the Bang Bang Sauce:

  • 1/2 cup mayonnaise substitute Greek yogurt for a lighter option
  • 3 tablespoons sweet chili sauce
  • 2 tablespoons sriracha sauce adjust to taste
  • 1 tablespoon honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon lime juice

For Garnish:

  • 2 tablespoons chopped green onions
  • 1 tablespoon toasted sesame seeds
  • fresh cilantro leaves optional

Instructions
 

  • Cut chicken breasts into 1-inch cubes. Toss with olive oil, garlic powder, salt, and black pepper.
  • Thread the seasoned chicken onto pre-soaked wooden skewers, 4-5 pieces per skewer.
  • Heat a grill pan over medium-high heat. Cook skewers for 2-3 minutes per side until golden brown and internal temperature reaches 165°F (74°C).
  • Whisk together mayonnaise, sweet chili sauce, sriracha, honey, rice vinegar, and lime juice to create the bang bang sauce.
  • Brush cooked chicken skewers with bang bang sauce or serve sauce on the side for dipping.
  • Garnish with green onions, sesame seeds, and cilantro. Serve immediately.

Notes

For a healthier version, replace mayonnaise with Greek yogurt and grill instead of pan-frying. Adjust sriracha based on spice preference.
