Instructions
Cut chicken breasts into 1-inch cubes. Toss with olive oil, garlic powder, salt, and black pepper.
Thread the seasoned chicken onto pre-soaked wooden skewers, 4-5 pieces per skewer.
Heat a grill pan over medium-high heat. Cook skewers for 2-3 minutes per side until golden brown and internal temperature reaches 165°F (74°C).
Whisk together mayonnaise, sweet chili sauce, sriracha, honey, rice vinegar, and lime juice to create the bang bang sauce.
Brush cooked chicken skewers with bang bang sauce or serve sauce on the side for dipping.
Garnish with green onions, sesame seeds, and cilantro. Serve immediately.
Notes
For a healthier version, replace mayonnaise with Greek yogurt and grill instead of pan-frying. Adjust sriracha based on spice preference.
